Green Thai Tofu Curry (Vegan)

Bunch of chopped asparagus or green beans
1 red pepper, sliced
1 red chilli, chopped
3 tbsp coconut oil
400 mls coconut milk
1 lime
200g tofu

For the green curry paste
2 stalks fresh lemongrass
4 spring onions chopped
2 green chilies
2 cloves garlic, chopped
1 inch chunk of ginger
Large handful fresh coriander
6 lime leaves
3 tbsp coconut oil

To make the curry paste
Put lemongrass, spring onions, garlic, ginger, green chilies (you can remove some seeds if you don’t
like it too hot!) and lime leaves in a blender. Put most of the coriander in also. Add the coconut oil and
blend to a green paste

To make the rest of the dish
Heat a large frying pan with oil and add chopped asparagus and curry paste. Cook for 1-2 mins Add
red peppers and chilli and cook for a further 1-2 mins
Add coconut milk and bring to the boil
For non Vegan version, add chicken thighs and simmer until chicken is cooked (approx 30mins)
Squeeze in juice of a lime
