VEGAN NACHOS – Yes. They are that good.
1. Use my Chilli recipe and replace the beef mince for Quorn vegan strips.
2.Slice sweet potato super thin and place in a grill pan, use coconut oil or 1 cal spray and cajun spices to add flavour. Bake in the oven for 10 mins then flip over and bake for a further 5-10 mins.
3.Take out your sweet potato “crisps” then layer in a dish with guacamole, vegan cheese (I use Violife block), jalepenos, chilli and top with more vegan cheese.
4.Bake until a melty mess and serve with a dollop of coconut yogurt (I use Koko original )
5.Enjoy by yourself or with friends. I did this for a dinner party last week…they were surprised it was vegan. BOOM.
